Chocolate Snap
Snap is a term commonly used to describe the feel and sound of
breaking apart a piece of chocolate by hand or bite. Good chocolate
breaks, to leave a clean edge and produces an audible cracking sound.
A good snap is indicative of chocolate that has high percentage
of cocoa butter (couverture), and has been processed and stored
with care.
